Banana Mini Rounds (Banana Ebelskivers)

Another yummy kid friendly creation from my friend Jyothy. She calls them Banana mini rounds, a  fun name for kids to get excited to eat. They look similar to appam and they sound simple to make and delicious to eat for both kids and adults alike. 
Here's what Jyothy had to say about the recipe: "The recipe was put together by something my sister said she made for her coffee mornings out of left over bananas- as I was complaining about bananas rotting often in the kitchen."
Ingredients:
Whole milk - 1 cup 
Banana - 1 large, ripe 
Cardamom - 3 pods 
Brown sugar - ~1/3 cup in lieu of jaggery which my sister used (add more if you like them sweeter)
Baking soda - 1/4 tsp 
Wheat flour - ~1/2 cup 
Cream of wheat - 2 tsp (or use wheat/ godhuma rava) 

Method
  • Blend the first four ingredients, add wheat flour until the consistency is similar to that of pancake batter. Add cream of wheat and soda mix well. 
  • Heat the stove top cast iron pan, lightly grease it with butter and pour the batter. Let them brown on one side, then flip and get the tops to brown. 
Jyothy's daughter Raaga loved these and she thought they tasted similar to the banana cupcakes that her mom normally makes for her. She also wanted her mom to make them EVERYDAY. Now that makes a mom VERY happy.
